People sometimes say it is too expensive to eat healthy. It’s not necessary to spend extra bucks on already made hummus when you buy a can of chickpeas for less than a dollar and turn it into the best lemon dill hummus I’ve ever eaten, – without added oil or tahini. Also, when you make it at home you know exactly what went in it.
Lemon Dill Hummus Without Added Oil or Tahini
1 15 ounce can of garbanzo beans, drained and rinsed (save the liquid)
1-2 cloves of garlic
2 Tablespoons lemon juice
1 teaspoon lemon zest
1 teaspoon dried dill (2 if using fresh)
1/2 teaspoon sesame seeds (optional)
In a food processor or high speed blender, blend all ingredients until smooth. Add the reserved bean liquid (or water) a little at a time until you reach the consistency you desire.
This lemon dill hummus makes a great dip for fruits or veggies. Without any added oil or tahini, it is low in fat which makes it a healthy snack option. It also works in a wrap or on a sandwich. Adjust the lemon and dill to your tastes and enjoy!
I also like chocolate hummus with fruit. Red roasted pepper hummus without added oil also makes a good dip you and guests will love.
